Using Cast Iron Skillets in Your Bradley Smoker

Posted on May 27, 2013

I just wanted to share with everyone a cooking technique I stumbled across to use with my smoker (Bradley).  When cooking pork, or beef simply use an old cast iron skillet instead of wrapping your meat in foil.  All I do is spray the meat with oil, add dry rub, and put it in the cast iron skillet.  In this case, it my old National (made by Wagner ca. 1895-1915 or so).  This works especially great for pork chops, pork shoulders and roasts, beef brisket, etc.  It also makes a nice smokey gravy in the bottom of the pan when you are done.

Florida Backyard Chickens: How Hot is Too Hot (Episode 3)

Posted on April 12, 2013

I nearly accidentally killed my chicks last night. There was a power spike that kicked off the thermostat of my small heater during a rain storm. The heater came back on, but I didn’t notice the thermostat was off. By morning, the baby chicks were suffering from the heat. The turkeys and geese were still pretty much okay. I was seriously afraid that I would lose one of them.

However, they pulled through just fine and are running around their boxes.
